Don't waste your time doing video with a DSLR.  For under $50, you can buy a used, brand-name camcorder that has been specifically designed for shooting videos, and your recording time is only limited by the size of your SD card.

If you'll never enlarge an image that will require 45mb, and you only use jpeg, and you are wanting a 70-200mm, and you have DX lenses, for what reason are you wanting to move to FX?  As a retired professional wedding photographer, when I moved from film to digital, I seriously considered buying an FX camera, but after much research, I bought a DX, and to this date, there has been nothing that I've wanted that only the FX could do.
 
Question: The D850 is an amazing camera, but have you asked yourself what do you hope to gain by leaving your D5600 for the D850?
 
Reasons to stay with DX
1. Any used body you buy will be MUCH cheaper, lenses also. 
2. You can use your existing lenses.
3  Except for the D500, all DX cameras have built in flash, and for the one time you may need it, it is great to have - even to trigger an external flash.
4. Unless you are requiring very wide, the DX has 50% more length.  eg 200mm on an FX is the same as 300mm on a DX
 
If you wish to upgrade, seriously consider a D7200.  It has the advantage over the D7500 in having 2 SD card slots, and the advantage over the D500 in that it has 2 SD card slots rather than one SD and one XQD, as well as a built-in flash
 
The learning curve from the D5600 to the D7200 is so minimal, you'd think you are using the same camera
 
Don't be fooled by all the hype about mirrorless.  Sure they are the latest technology, but what do they offer, except being lighter, smaller and better video?
Your battery won't last anywhere near as that in a DSLR.
 
Yes, I am biased.  I have owned almost every Nikon DX body, and now have 2 D7200 bodies and it is the best camera I have ever owned, and after using a borrowed mirrorless, there was absolutely no advantage for me.

I have a UV filter permanently affixed to all my lenses, and never use lens caps.  I always keep a lens cleaning cloth in my bag in the event the filter becomes dusty or dirty.

If it's between a D7200 and a D500, I would go for the D7200 for 3 reasons:

1. The D7200 has a built-in flash, whereas the D500 does not - can be extremely useful

2. The D7200 takes 2 SD cards, where the D500 takes 1 SD and 1 QXD card, which are extremely expensive, if you can find them

3. The D7200 will cost you a lot less than the D500

You can get one on ebay for under $3:00  .  Mine worked on my old D3200, and now on my D7200, so it should be fine.

As a retired professional wedding photographer, I only ever used manual settings, especially when doing the night photography session.  However, now that I shoot landscapes for myself, I have come to the conclusion that unless I shoot a waterfall (shutter speed priority), or want to blur the background (aperture priority), I figure that Mr Nikon has spent millions of dollars developing my D7200 to take a perfect photo in Program mode, so I just go with it.  Sure there are many times when I have to override this dummy setting, but for the majority of my shots, it's all I require.
 
That being said, a P&S camera would not give me the quality nor the flexibility to get any of the shots that I'm able to take with my DSLR.

As a landscape photographer, I use Photoshop for most of my shots for:
- slightly enhancing the sky 
- getting rid of unmovable eyesores (power poles and cables, rubbish, unwanted people)
- fixing incorrect colours & contrast
- cropping
 
Spending a lot of money on gear doesn't make a better photo, but:
- A decent camera is so much more pleasureable to use
- Gives you a better chance to capture a shot that a cheap camera would not be able
- A better camera with more megapixels gives more flexibility when cropping
