Raw shooting

I am not new to DSLRs but recently bought a Nikon D610 ( my first Nikon ). Say I am in Aperture mode and shooting RAW. My question is how to set sharpness, contrast, etc? OR is it all done by software from the RAW file? Does picture control settings effect RAW files except in Manual mode? I guess basically I am finding that some of my pics seem to be too bright even on a cloudy day and at ISO 100. Thanks for any input.

I just switched systems. Two short weeks ago I became a proud Nikon owner. I switched from a Sony system, definitely no regrets so far. I got the Nikon d610 and really like it.
