I am an intermediate hobby photographer and am really interested in "clicking" it up a notch (to an SLR). (ok, that was cheesy, I know. sorry). I've been looking at the D7000, D7100, D600, and D610. Any suggestions?

If this is your first DSLR don't over spend.
The 7000 is probably going to be more than enough camera for you.

It will be my first DSLR. I'm very excited (and of course, love the specs of the 7100), but I want to be sensible. as well. Thanks for your advice.

I'm not sure exactly what the differences are between the 7000 and the 7100.
Maybe some one will come along here soon and tell you.
I know the two are almost the same camera.

D5200 - 700
D5300 - 800
D7000 - 900
D7100 - 1100
D600 - 1700
D610 - 2000
Get the D5300 over the D5200 as its a newer model for not much more.
Get the D7000 over the D5300 if you want and will use the more advanced specs.
Get the D5300 over the D7100 as $300 savings will get you one decent lens.
Get the D7100 over the D600 as $600 savings will get you one or two decent lenses, and do you really need to jump to full frame?
Get the D610 over the D600 to avoid oil/dust on sensor issues.
As someone mentioned above, unless there's one or two must have features that you must upgrade to either the top of the line FX models (d7000/d7100) or full frame, the best value is easily recommended is the D5300. You won't get better image quality from either the D7000 or D7100 so it's all about what features you need.

You can probably find some of them used or refurbished as well. But since it is your first DSLR, I would suggest making sure you purchase from a reputable company who will stand behind the sale...not expecting a problem, but better to be safe since you are getting into something unfamiliar.

I was just up browsing on the Nikon site and see they have refurbished D90s for under $550. That might be your best bet if the D90 has the features you're looking for.
