My D800 will not shoot in manual. It works fine in all other modes. Does anyone have any suggestions as to what could be wrong?

Well, I’m not an expert in the workings of modern electronic cameras but, since no one else has come forward I might as well have a go! You may well have gone down this route already but here goes...
When you say ‘will not shoot’ what, exactly, do you mean? Does it switch off? Does it meter but refuse to trip the shutter? Does it not meter?
Is it the same with different lenses?
Since it works in all other modes, It would appear that the problem is software related, rather than something amiss with, for instance, the shutter, the chips or the power system. Does the camera have a hard reset? If so, have you tried it?
One other possibility, I have a D610 so I’m not familiar with the D8** family. Is the mode selection a physical rotary dial? IF so, and if there are physical contacts in the switch, it might simply be oxidised contacts which could be cleaned - either physically by a technician or chemically with a proprietary contact cleaning solution.
That’s all that springs immediately to mind. Hope you get it sorted.

Yep...it could be one or several things that are wrong, but since we have no idea what you mean by "won't shoot" it is really impossible to answer without more info. It would also be helpful to understand by what you mean by manual. What settings did you select for Aperture, Shutter Speed and ISO? Were you manually focusing as well?
The more details you can provide us, the easier it is going to be for us to identify the problem or problems.
