Need advice on fill flash with 7100 and SB 80

I shoot a lot of mid-day farmers with caps and need advice on how to set the flash/camera for fill flash. I've read the manuals and still can't make much sense of it. Should I leave the diffuser on the flash? Really hard to get it right. Unfortunately I cannot change the time of day or the guy wearing a hat.

You will have to use the flash in manual as the last body to support it was the D100 is I remember correctly. This means that you will get more useful info reading the strobist website than the manual. If you don't like shooting with manual flash, the SB-80DX is quite sought-after on ebay by the strobist crowd and you can probably sell it and buy a modern unit without having to add much money.

 

If the heading is a typo and you in fact have a SB-800, set the body to manual exposure and ISO, adjust the ambient exposure to ~1 step below what the meter says and let the flash automation do the rest.
