Are you looking for people, scenery or an event? What sort of setting do you have your camera set for in order to get that very quick 'photo opportunity'?

Interesting people, people in their element, interesting compositions and backgrounds, people shopping, coming from events (people at off street events is more documentary photography than street), or people at actual "on street" events.

I usually set around f5.6 or smaller, focus about 15 feet away, and keep ISO high enough to avoid camera shake. Having it set to continuous shooting helps capture several frames you can choose from later. Either manual focus or set your camera to allow the shutter to fire even if focus isn't locked onto something, or it can delay shots and possibly cost you the "decisive moment".
