So I finally purchased my first digital camera. Upon start up I cannot connect snapbridge. I look further into it and see there is tons of issues with it connecting to Android 7.0. Which is what I have (Samsung S7 Edge).

What should I do? What is the current situation on this? Is there a fix coming, or am I just simply not going to be able to use snapbridge, Which I was kinda excited about? Other than this, I have no problems with the camera.

Nikon's WiFi support has always been poor. Coupled with a Samsung device where there is a history of not playing well with others and getting timely software updates, there is most likely little you can do.

Short of the typical troubleshooting steps (delete the app's data and cache, force quit, uninstall, reinstall, and if all else fails, an FDR), your only other option is to complain to Nikon and Samsung and wait for an update.

FYI... either Android 7.1 or 7.1.1 broke the Wifi connection process between my HTC RE camera and my Nexus. Numerous support requests to HTC fell on deaf ears (last product I buy from them). But when Android 7.1.2 rolled out the issue was gone. So hopefully Samsung rolls out 7.1.2 to your S7 (good luck) and it addresses your issue as it did mine.

In the mean time, if you use Google Photos, it has a wonderful interface for transferring your photos (even raw files) by plugging your camera into your phone via USB. This works MUCH better than Nikon's app ever did (although it does not let you control the camera).
