This is what I've been able to shoot with the D600 with the requirements you're looking for. Obviously your lens combination/lighting/settings will have an effect on your results. So the D610 should be able to do what you require.

This is birds in flight.

This is low light photography.

This is shooting indoors... (no flash). Though I now do have an sb-700 which gives fantastic results when you need a flash.

Can't find anywhere stating if it has an AA filter or not.

The D610?  It does have a filter.

Wow, this looks awesome. I went to my local Best Buy this morning and they don't have it in. Not sure if, or when, as the sales guy knew nothing.

Anyway, I will keep checking with them. I want to fondle one.

I have not had any experience with the camera as of yet; but would love to get my hands on one for the day and give it a run through.

This will be a big upgrade from my D70. Like many other Nikon shooters, the oil spot issue gave my pause. Glad Nikon fixed the issue and pulled me off the fence.

With the minimal increase in price over the d600, i would go the extra bit for the added features.

I decided to go ahead and order the new D610 after patiently waiting for better sales on the D800.  I also plan on ordering the D800 later, so the D610 should be a good 2nd body.

Will DX lenses and older AF lenses work with this camera?

Owning a D7100 already it would be a hard choice between picking the D610 or a second D7100 as backup. I really like the idea of having a FX body as part of the arsenal, it looks like the perfect "starter" full frame camera and would come in very handy when reach and speed weren't top priority.

So DX lenses will work on an FX camera?

Yes DX lenses will work with an FX Camera. The camera has a DX setting that you can use.
