Manual Exposure Question.. for the z7ii

So  bought a book for  the Nikon z7ii and I'm at a loss.   I want to have full control over the exposure and putting it in manual only gives me full  control over the aperture and speed but not ISO.  There must be a setting or something I'm missing but so far I've not found it in the beheometh of a book or online.   I need this for shooting the moon and milky way.

Toss a dog a bone?

Right behind the shutter button, there is an ISO button. The standard function on this is to set ISO with the rear wheel and toggle AutoISO on or off with the front wheel while pressing the button.
