Nikon Z6ii and "i" menu

Hello, I have an issue with my brand-new Nikon Z 6ii camera. I performed the set-up and firmware update and using the book Mastering Nikon Z6ii/Z7ii to learn about the camera. Within the "i"; menu, there are several (not all) settings that will not activate using the Command Dial(s). For example, White balance, Picture Control and Metering. The font/boxes for these settings are shaded back, as if they are not on. I have contacted Nikon support to figure out what is going on or its cause. They recommended sending it in for service.

 

I would hate to send it in while I am still learning the camera. Maybe its my mistake.

I believe there is another setting(s) somewhere that will turn these I menu settings on. Any help would be greatly appreciated.
