My subject has an intense deep red color when viewed by eye, or iPhone, but images using the 7100 with a 105 Macro lens show no red. Does the 7100 have cutoff for specific longvwavelengths?

All Nikons have IR and UV cut filters in the filter pack on the sensor to limit hotspots. They don't cut until well into the invisible range, though. If you shoot in jpg or convert your raw file with Capture NX-D, what picture control do you use? If you shoot in raw and use a third-party converter, how do you map the reds?

As blown reds and IR blooming are well-known problematic areas for all digital sensors, standard processing is often set with conservative defaults.

What do you use to view your photos? If you shoot in AdobeRGB and use a viewer that can't handle the wider gamut, your reds will look veiled or muddy.

Thanks for the suggestions. I am shooting RAW and will look at the mapping process to see if tweaking it will help. The red is most likely at 735nm, so may well be filtered out: I may try doing an IR conversion on the camera to get round it.
