I have a D7200 and a D3200, both 24 Mp, both 6000 x 4000.   However, though both cameras are set up the same (Fine and Large), when taking a photo of the same scene, the file size from the D7200 is between 15-18Mb, whereas the file size from the D3200 is 6-9Mb.  Why would there be such a massive difference in file size for cameras of similar specifications?

It may have to do with bit depth!
One might have an 8 or 10 bd as the other 10 to 12.

The D3200 has a colour bit depth of 24.1, while the D7200 has a colour bit depth of 24.5   Would such a small difference (0.1 %) make such a difference to file size?

There is a BIG misunderstanding of what is bit depth as I see it, google it!

The bit depth doesn’t enter into the OP-s case as both cameras are in Large Fine JPG, which is 8-bit.
