on the P900, in the scene mode, what does the camera do when "bird watching" is selected ?  f stop, shutter speed, etc.  ? ?

Try it and find out.  That is one of the things about photography, it can be lots of fun to experiment!  Especially with digital photography since you can review the results immediately and adjust from there quickly.  

 

There is no specific setting that is made because the light will not always be the same.  The P900 manual or a book on the P900 may give you an idea of the basic parameters for each scene mode.

For what I saw on my pictures. Bird-scene levels up ISO. Even with bright sunlight. This will give very nice colors.
When looking closely to the pictures, you will miss some sharpness. But also no noise.
I think the settings are forced to max noise reducition. This to compensate the high ISO (400 is quite high for P900).

Alternative, set it on "S", ISO to automatic (100-400). Set noise reduction to low. Dynamic lighting to normal (sunny) or high (cloudy day).
