Scott Kelby's books have always been a go-to.

The Adobe Photoshop Lightroom Classic CC Book for Digital Photographers

and

The Adobe Photoshop CC Book for Digital Photographers

I have heard good things about Lesa Schneider's

Adobe Lightroom and Photoshop CC for Photographers Classroom in a Book

It is the official Adobe book for the software and seems to ba as good as ever.
