Question - Let's say I add 1 stop of Exposure via EV & that setting is on my camera when I decide to Bracket 3 shots with the add setting at 1 stop. Does the camera use the existing setting of 1 stop EV as the base & apply the bracketing to that or does it override the setting and apply the bracketing from zero EV?

All my cameras use the EC as an offset for bracketing. To check if yours does, shoot a series and take a look at the EXIF to see the values.

My cameras will take the set EV as a starting point.
Overriding makes no sense  in any case.
