Between the bodies I have, (Nikkormat FT2, EM, N80) I can use just about any F-mount lens.

The N80 is good for most any modern lens, but doesn't have the AI aperture coupling, so is near useless for older lenses.

What are some of the most compatible bodies? As in they can use (at least) AI and Non-AI lenses, and perhaps even autofocus and/or G lenses?

Here's a chart showing which bodies are compatible with the various Nikon manual and autofocus  lenses.

The most compatible of all is the Df. (Everything that doesn't need a mechanical mirror up.)

The most compatible film camera is the F4. (Everything except G-type lenses.)

The F5 can still be converted for pre-Ai lenses, which would make it the most compatible of all. The Ai tab is fixed as standard, so mounting a non-Ai lens will break the coupling.

By still be converted, do you mean sent back to Nikon?

Yes, there might be some independent camera repair places that still do the upgrade, but Nikon is the safest bet. The same upgrade can be done on an F6, but the F6 isn't compatible with the earliest ultrawides as the MLU is electronic and not mechanical like earlier F bodies.

The Df has the electronic MLU, just like all Nikons after F5 production ended. As long as you don't have the 60-s fisheyes or the 2.1 cm/4, everything else up until, but not including, AF-P lenses works on it without any conversions to lenses or body. Pre-Ai lenses need the Ai tab on the body flipped away and stop-down metering
