2 Menu Questions...D7500 and probably others

Just received my 7500 as an upgrade to my older D5100.  I am configuring options.  2 menu questions...

 

--Why do some menu items have stars/asterisks on the menu number.  Does this signify a change from default or something else?

--Custom Setting Menu option a10 (Manual Focus Ring) seems to have disappeared.  I mistakenly changed it from default/Enable to Disable.  I can't seem to find the option to change it back.  Where did it go?

Example:

In choosing an Exposure Metering Mode, one of the options is "Spot", the symbol being a dot inside a square.  

Another option is "Highlight-Weighted", the symbol being a dot inside a square with an asterisk.

 

"Spot" mode (with the exception of when you have also selected Auto Area AF-area mode)  is going to meter on a single focus point that you select.

 

"Highlight-Weighted" is similar to "Spot", but instead of metering exclusively on the single focus point, it is going to meter based on the Focus area selected, but put more "weight" on the single focused area or highlighted area.

 

Of course your lens has to be compatible with Highlight-Weighted metering for that to work.

 

So in this case, it's really just an additional option.
