… how much we who started out with film are influenced by the look of our chosen emulsions back in the day.

I really like to see the difference in pp in my weekly Your best… and now my Single in July threads.

I have analyzed my own shots and believe that growing up with Agfachrome CT slides, Ektapress colour neg on Kodak papers and Ilford PanF, FP-4 and HP-5 developed in the relevant Ilford soups and copied on Gevaert Artona and Ridax papers while they were available and later the Kentmere FB Warmtone papers and selenium toner has had a huge impact on what looks about right to me.

Does anyone else have any thoughts on this subject?

I think there is some of that...I shot lots of Tri-X for the paper and I still like the feel of it.  I usually have in mind while shooting if I want to take an image towards monochrome but I have always preferred crisp, contrasty shots - probably because of the Tri-X.

Yeah, Tri-X pan. I still get goosebumps when I see a good Tri-X print. That and Kodachrome 25 slides.
