I’ve noticed that the non-availability of Nikon film cameras is growing. I’m referring to the FE and FM models. Most of what I see are pretty well shot. Anyone have an opinion?

The last FE and FM made are nearly forty years old and the well-preserved ones changed hands when the Covid mess started. The ones for sale now have often been banged around in cars and bags by pros. 
We live in strange days when a nice F4 is about the same price as a nice FM and cheaper than a FM2.

In the past 6 months I've purchased an FM and FE on eBay. The FE came with an MD-12 and was very clean and works well. I paid $107 shipped. The FM I purchased also looks great and works well but the focus screen has marks... it's annoying but still usable. Both cameras needed new light seals. I paid $54 for the FM shipped. So, you can find good bodies out there but it is risky when you're paying lower prices. As stated, a good clean body can run you more than a F4s.

I also recently purchased a black F2S. It was in good condition and the DP-2 finder works well, but I discovered a problem with the mirror, which sometimes sticks when the camera is upside down. I quick shake drops the mirror, but this isn't normal operation and the camera would need a good CLA to fix. I paid close to $200 for it. Considering I got a DP-2 finder, it's still worth the price, but I don't think I'm spending $250-$350 for a good servicing for it. The camera is usable though since I don't normally shoot upsidedown.
